Simple Food: Baked potatoes in foil with Tzatziki ♥ Семпла храна: печени картофки във фолио със “Снежанка”

As the summer is almost here I guess you don’t want to spend a lot of time in the kitchen while you can do other fun things instead. Today I have an easy recipe, which on the first glance is a bit strange but actually it’s quite delicious. I am talking about baked potatoes in foil with something like the greek sauce/salad called Tzatziki, but I changed it a bit and it is more like the Bulgarian version called “Snow-white salad”.  The idea about this dish came from a Czech friend of mine.. so it’s very international dish after all.
Here is what you’ll need:
6 bigger potatoes
Olive oil
Black Pepper
Sea Salt
Aluminum Foil for baking
Caraway

For the Tzatziki (Radostina’s adaptation) :)
1 cucumber
500 ml yoghurt
Dill
1 tbsp lemon juice
Olive oil
Salt

Preparation:
Wash thoroughly the potatoes and let them boil for about 15 minutes. Take them out of the water and spread olive oil on them, powder with the pepper, caraway and the salt then cover each potato in a foil.
Bake for 40 minutes on 250 degrees Celsius (~480˚ F) in a preheated oven while from time to time turn them around.
I admit that I changed a bit the Tzatziki, because we have similar quite popular salad in Bulgaria so I did it that way. Cut the cucumbers in small cubes, removing the seeds. Leave the cut cucumber aside for a while. The yogurt should be straitened using paper bag or filter to remove the whey.
Mix the yogurt and the cucumbers and then add the dill, the chopped garlic, the dill and the lemon juice.
Add some olive oil and salt to taste.

You have as a result delicious and light summer dish. :)

Тъй като лятото е съвсем близо, предполагам че и на вас вече не ви се прекарва дълго време в кухнята. Днес имам съвсем лесна рецепта, която на пръв поглед е малко странна, но всъщност си е много апетитна. Става въпрос за запечени във фолио картофки с гръцкия тзатзики, малко видоизменен от мен в посока салата “Снежанка”. Идеята за това ястие всъщност сподели моя приятелка от Чехия. Изобщо… получи се много интернационално ;)
Eто и какви продукти са ви необходими: 
за картофите:
6 големи картофа
зехтин
кимион
грубо смлян пипер
морска сол за готвене
фолио за печене

за “Снежанка” или видоизменения тзатзики:
1 краставичка
кофичка кисело мляко
3 скилидки чесън
копър
1 лъжичка сок от лимон
зехтин
сол

Начин на приготвяне:
Картофите измийте добре и оставете за 15 минути да поварят. След това ги изкарайте от водата и намажете със зехтин, поръсете с ким, пипер и морската сол и овийте във фолио. Печете още 40 минути на 250гр. в предварително загрята фурна, като отвреме навреме обръщайте картофките.
Аз си признавам, че малко видоизмених тзатзиките, тъй като никак не харесвам настъргана на ренде краставица. Затова я измих и я нарязах на много ситни кубчета без семената. Оставете  кубченцата краставичка да се изцедят за известно време. Същото направете и с киселото мляко. Когато сметнете, че е достатъчно смесете в купа киселото мляко, краставичката, добавете ситно накълцания чесън, копър и лимоновия сок. Прибавете мъничко зехтин и осолете.

Получава се лесно и сравнително бързо лятно ястие. Приятен апетит.

I usually don’t like new years resolutions, but every year I choose one word that will be significant for me and while the word for the 2020 was education, in 2021 I want to focus more on connection. 
For quite amount of time I was always scared to connect with new people - worried about my accent, my writing  to not bother people... and this year I want to overcome this fear and sincerely connect with you. 
So here I go - I say that loud and now I have to achieve that. :)
