Simple Food: Little Vitamin Bomb ♥ Семпла храна: малка витаминозна бомба

As I have already shared in the 79 ideas Facebook group today we will create a mess in our kitchens. What is important though is that we will not spend hours there, simply because this is not the goal of our “Simple food” column.

Spring is already here and with all these fresh and different vegetables we have the chance to cook something pretty tasty and full of vitamins. And here is my favorite meal which I call “Little Vitamin Bomb” – a mild dish that you can prepare quickly, it is delicious and healthy.
The best proof that it was very tasty is that my husband ate it and enjoyed it (even without steak next to it) :).

Preparation:
What is important to do prior is to cut your eggplant – better on rings, dust it with salt and leave it at least 30 minutes. This is an important step that will remove most of its bitterness. Then wash it and dry it to avoid frizzing as the next step is to fry it gently in highly preheated oil.
Hold it there for about 5 minutes and then add the garlic and the carrot also cut on small slices. After a minute add the rest of the vegetables and keep it there for at least another 5 minutes. Before you remove it from the heat sprinkle with salt and pepper.

When serving you can also put on the top some dill or parsley on preference. 

Както вече споделих във Фейсбук групичката на 79 ideas днес малко ще си поизцапаме кухните.  Държа да отбележа, че няма да се престараваме и да прекарваме часове там, в краайна сметка не това е идеята на простичката храна.
И така, тъй като е пролет има много полезни зеленчуци, които ако се сготвят има шанс да ни се получи нещо доста вкусно и пълно с витамини. Аз не зная по подходяща рецепта в този смисъл от моята малка витаминозна бомба. Това е едно леко ястие, което се приготвя бързичко и е доста вкусно, че и полезно. 

Приготвяне:
Това, което е важно да направите предварително е да нарежете патладжана на колелца, да го осолите и да го оставите така за поне 30 минути. Това е важна стъпка, която ще премахне голяма част от горчивината му. След това го измиваме и подсушаваме, за да не пръска, тъй като следващата стъпка е да го запържим лекичко в силно сгорещената мазнина (аз използвам от тиганите със специално покритие и сипвам доста по-малко мазнина. получава се нещо като пържено-печене :) ).
Държим го там за около 5 минути и добавяме чесънът и морковчето. След това и останалите зеленчуци и отново за около пет минутки. Преди да го махнете от котлона поръсете със сол и пипер.
При сервирането може да го поръсите също и с копър или магданоз по предпочитание.
Днес го отчитаме здравословен ден, тъй като направихме нещо полезно за себе си.
